Recipe. Mediterranean style polenta


Polenta is an Italian national dish, so I've prepared my own variation of it, saluting to its Roman origin. 


Ingredients:
  • polenta
  • salt
  • dried tomatoes
  • mozzarella

Here's how you make it:
In a larger pot bring the water to a simmer, adding in some salt. Whisk in the polenta and stir, but make sure it isn't boiling. If it does, reduce the heat, and cook (uncovered) for about 30 minutes, stirring every now and then preventing lumps from forming.

Ok.. so we've done the cooking, now let's get down to baking. 
While the polenta is stil liquidish, place it in a smaller baking dish. Lets mediterranean style the hell out of it by adding mozzarela and dried tomatoes. But make sure you mix it in well, so that the added ingredients are not all only on top!

Place the baking dish into a preheated oven, and bake at 180C for about 10 minutes.

I think the Romans would have been proud, don't you?
